A simple machine with a critical role

The melting tank is often one of the simplest machines in a chocolate production line. Its core function is clear: to melt the chocolate so that more advanced equipment can take over, such as tempering machines, depositors, or enrobing machines.

Although the function is simple, its importance is not. A melting tank must be just as stable and reliable as the rest of the production equipment. The entire process depends on the melted chocolate being ready when the downstream operations require it.

A production line is never stronger than its weakest link. Therefore, a reliable melting tank is essential for consistent and predictable output.

Semi-industrial chocolate manufacturers often operate continuous production lines near full capacity. This requires precise setup and a steady, reliable supply of melted chocolate.

Even small delays can impact total output. Once the process is optimised, only a minor disruption can cause flow to decrease, forcing machines and operators to pause.

In theory, melted chocolate can be manually tapped and transferred to the next machine. In practice, consumption is often high enough that manual handling becomes inefficient, increasing the risk of interruptions. To maintain a stable, predictable flow, most producers therefore use pump-based systems that automatically deliver chocolate to the equipment that needs it.

The H500 melting tank can supply melted chocolate directly to consuming machines. A typical example is a 1000 mm wide enrobing machine, the 2MP100, where the chocolate is transported through a heated piping system that maintains the correct temperature throughout the process.

When two machines need to be supplied from the same melting tank, the system can be fitted with a three-way valve. The valve position determines which line receives the chocolate and allows operators to switch between production processes without major adjustments. H500 can also supply the mobile TB100 batch tempering machine, which can temper 100 kg of chocolate per hour. This enables one melting tank to support both continuous and batch-based production within the same facility.

What happens when melted chocolate is missing

When the supply of melted chocolate stops, the effects quickly spread through the production line. Even brief disruptions can reduce overall output and cause machines and operators to wait for the process to resume.

Here are some typical scenarios:

  • Enrobing of biscuits or cakes
    An enrobing machine depends on a continuous flow of melted chocolate. If the chocolate is unavailable, products cannot proceed into the cooling tunnel and cannot be packed afterwards. The flow-pack system halts, and so do the operators linked to it.
  • Tempering for praline production
    A tempering machine feeding an enrobing process relies on a steady supply of melted chocolate. If the chocolate is missing, no finished pralines are ready for manual packing, leaving the packing staff without work.
  • Other equipment
    Similar issues occur when depositors, dragee machines, or other chocolate-using units do not receive the chocolate they require.

The main concern is the overall impact on delivery capability. A shortage of melted chocolate affects both short- and long-term production planning and can influence commercial relations with partners and customers. A simple melting tank may seem easy to overlook, but its role is just as vital as the more sophisticated machines in the line. In some cases, having extra capacity offers valuable security, as the melted chocolate will always be needed and can be utilised without waste.
