Chocolate production that keeps up when the season peaks

Christmas may feel a long way off, but it has a way of arriving sooner than expected. Now is the time to plan this year’s capacity.

When the season builds, the limit is no longer what you want to produce, but what you have time to. For some producers that means orders declined. For others it means weekends worked through, or products left out of the range because there was no time.

How did last year’s Christmas production go?

If last season was comfortable, there is nothing here you need — production that works should be left to work.

But if you turned down orders, worked through weekends, or left products out of your range because there was no time, now is the time to look at it. The orders you decline in November are the most expensive part of the season — and the customer who found another supplier does not always come back in January.

Two machines that cover the two places where capacity usually runs out

We have picked out two machines that cover the two places where capacity usually runs out: tempering and enrobing. Both are built for small and mid-sized production.

E220 – enrobing, mould filling and tempering in one machine

The E220 combines enrobing, mould filling and tempering in one machine. It enrobes and bottom-coats pralines, bars, biscuits, cakes and pastries, and handles solid and shell moulding of standard praline moulds and hollow figures. Callet tempering takes place in the 20-litre vessel.

It is built for the step from hand-tempering to professional production, and can be operated by one person in most setups.

TB20-2 chocolate tempering machine with two 20 kg tanks for different chocolate types

TB20-2 – controlled three-stage tempering of two 20 kg batches

The TB20-2 tempers two batches of 20 kg with full control of all three temperature stages, stored and repeated tank after tank. The two tanks can run the same chocolate or two different types, for example dark and milk.

The entire volume in the tank reaches a uniform temperature at each stage before the next begins.
