Melting machines are used for melting compound or couverture chocolate. Chocoma melting machines have all a water jacket. It provides a stable temperature of the inner surface of the tank, and thereby a gentle melting of the chocolate. Once the chocolate is melted and finally obtained a uniform temperature determined and set by the operator, the chocolate is kept at this temperature in the holding period.

The chocolate can be drained manually from the machine. Alternatively, the melting machines can be equipped with a pump and pipe system for external transfer of the melted chocolate to e.g a tempering machine or a enrobing machine.
